Peppers and I go back a long, long way; and it’s definitely not a friendship story. When I was young our neighbours had a pepper shrub in their yard and being as ignorant as what I was as a lad, I thought it was an apple… Doing numerous amount of covert manoeuvres which I was learnt through many watching A-Team and MacGuyver episodes I gained access to their perimeter. I had the prize in my hand, but was shocked and well appalled, when I took my first bite from the fruits of my spoils only to realize it was hollow inside and bitter!
Since then it has taken me years before I could I could eat peppers in my food…
I have since overcome my fear and now am quite fond of peppers.
Stuffed Peppers Recipe
Ingredients:
- 4 large peppers any colour
- Salt
- 1 Large onion chopped
- 5 Tablespoons olive oil
- 1 tin chopped tomatoes
- 450g Beef mince
- 1 Garlic clove chopped
- 1 Cup cooked rice
- Freshly ground pepper
- ½ Cup tomato, chilli sauce and chutney mixed
Method:
Prepare the rice as per instructions.
Cut the top of the peppers off and remove the pith and the seeds
Bring a large pot of water with salt to the boil.
Boil the peppers for 3 minutes then remove and allow to cool down
Pre heat the oven to 180°C
Heat 4 tablespoons of olive oil in a large sauce pan and fry the diced onion and garlic until translucent and slightly browned.
Remove from the heat and add the chopped tomatoes and the cup of cooked rice and the mince meat.
Mix together while you add the salt, pepper and oregano to taste.
Drizzle a small amount of olive oil in the peppers and fill with the mince, rice and onion mixture.
Spoon over the sauce over the peppers
Bake for 50 min on a foil or baking sheet.
Mmmm, I love me some stuffed peppers. The best!
